Origin and provenance
This Pink Bourbon is produced by María Belén Díaz at Resinas farm in Acevedo, Huila — one of Colombia’s most renowned regions for high-altitude specialty coffee.
María Belén Díaz is part of the Huila Condor Project, dedicated to empowering women coffee producers in Colombia, and was among the first women in the region to obtain an advanced coffee processing certification from The Forest Academy.
Cherries are handpicked and undergo a 24-hour whole cherry pre-fermentation, followed by 36 hours of anaerobic fermentation in sealed bags with the mucilage intact. The coffee is then slowly dried on raised beds for approximately 15 days.
This process develops an exceptionally refined and expressive profile, where citric acidity intertwines with floral notes, green apple, green tea and tangerine.
Pink Bourbon, now considered one of the most sought-after varieties in contemporary specialty coffee, is prized for its remarkable aromatic complexity and vibrant cup character.
