A Colombian coffee co-fermented with strawberry, with an intensely fruity and sweet profile, with notes of strawberry, red berries, cane sugar, and citrus. Made from a blend of Castillo, Caturra, and Colombia varieties, this batch is crafted using a bold Honey process combined with co-fermentation with yeast and ripe strawberries. The resulting cup is vibrant, with a pronounced malic acidity balanced by an enveloping milk chocolate aftertaste.

Origin and provenance
This coffee is sourced from selected lots cultivated by Colombian producers in the regions of Huila, Tolima and Caldas, then processed at El Vergel Estate using advanced controlled fermentation techniques.
Cherries are handpicked and undergo a 24-hour pre-fermentation in plastic bags, followed by an additional 24-hour whole cherry fermentation. After depulping, the coffee is anaerobically co-fermented for 5 days with dehydrated strawberries and selected yeasts, allowing the beans to absorb intense fruit-driven aromas.
The coffee is then mechanically dried for approximately 10 days to ensure consistency and profile stability, followed by a final resting phase in GrainPro bags.
In the cup, it delivers an explosive and modern profile: strawberry sweetness takes center stage, layered with red fruit notes, brown sugar and a lively citric acidity that brings freshness and energy to the experience.
A coffee that fully represents the experimental evolution of Colombian specialty coffee.
