Colombia La Macarena Decaf originates from Finca La Macarena, the estate of Wilton Benitez—one of the most innovative producers in the Colombian specialty coffee landscape. Situated at an altitude of 1,950 meters, the farm is renowned for its scientific approach to coffee processing, which blends microbiological research, controlled fermentations, and rigorous selection protocols.
The cherries are hand-picked, sorted by size and density, and subjected to a double sterilization process using ozonated water and UV light.
First Fermentation: Lasts 48 hours, utilizing Saccharomyces pastorianus yeast.
Second Fermentation: Lasts 68 hours, enriched by the natural juices developed during the initial processing phase.
Drying & Decaffeination: Following a slow, controlled drying phase, the coffee undergoes the Sugar Cane Process. This natural decaffeination method utilizes ethyl acetate derived from sugar cane, allowing the coffee to fully retain its natural sweetness, aromatic complexity, and cup structure.
