An experimental coffee produced by Jairo Arcila at Santa Mónica farm in Armenia, Quindío.
This 100% Castillo micro-lot undergoes a controlled 48-hour dry anaerobic fermentation. During this stage, green apple is introduced into the fermentation environment, shaping a fresh and distinctive flavor profile.
After fermentation, the coffee is gently washed and dried on raised beds under controlled temperatures below 35°C until optimal moisture content is reached.
The Castillo varietal, developed by the Federación Nacional de Cafeteros, is known for its high productivity and resistance to coffee leaf rust, as well as its ability to deliver clean and well-structured cup profiles.
In the cup, it expresses remarkable clarity: the freshness of green apple blends with the sweetness of grapes and caramel, supported by a bright acidity that makes the cup lively and clean.
A coffee that combines process innovation with a widely cultivated varietal, elevating Castillo into a contemporary specialty expression.
