An experimental coffee produced by Jairo Arcila at Santa Mónica farm in Armenia, Quindío — one of Colombia’s most innovative specialty coffee regions.
This lot is the result of an advanced fermentation approach developed by Cofinet, combining aerobic and anaerobic phases over approximately 8 days, enhanced with rose infusion to shape its distinctive aromatic profile.
After fermentation, cherries are pulped while leaving the mucilage intact. This sugar-rich layer defines the honey process, contributing to increased sweetness and body.
Drying takes place on raised beds (elba drying station), where the coffee is carefully monitored and regularly turned to ensure uniformity and prevent defects, until reaching optimal moisture content.
In the cup, it reveals an intensely expressive profile: floral notes of rose petals intertwine with the sweetness of raisins and caramel, lifted by a bright mandarin acidity that adds freshness and balance.
A coffee that fully represents the most experimental and contemporary edge of Colombian specialty coffee.
