Indonesia Bajawa

A distinctive Indonesian specialty coffee deeply connected to the forests and communities of Bajawa, on the island of Flores. Line S and S795 varieties grow between 1,200 and 1,400 metres on fertile volcanic soils and are processed using Indonesia’s traditional Wet Hulled method. The cup is full-bodied and creamy with low acidity and deep notes of dark chocolate, tobacco, spices, black pepper, nutmeg, molasses, caramel and bitter cocoa.

Indonesia Bajawa comes from the mountainous region of Bajawa on the island of Flores, where coffee cultivation is closely intertwined with native forests, local communities and generations of agricultural tradition.

 

Coffee grows between 1,200 and 1,400 metres above sea level on mineral-rich volcanic soils. The area’s remarkable fertility is influenced by the volcanoes Inerije, Wolobobo and Ebulobo, which have helped create ideal conditions for Arabica cultivation.

Selected by JYN Group, this lot combines the Line S and S795 varieties grown by local smallholder farmers. Many farms are approximately one hectare in size, while some coffee is cultivated on traditional tanah adat, or “ancestral lands”: community-managed land entrusted to individual families according to local customs.

In some areas, coffee is grown within protected forests, where farmers are allowed to cultivate coffee provided that the native tall trees remain untouched. This creates a production system closely connected to the forest ecosystem and the biodiversity of Flores.

The coffee’s distinctive character is further shaped by Indonesia’s traditional Wet Hulled process. After harvesting, cherries are pulped and briefly fermented with the mucilage still attached. The coffee is then partially washed and dried only until it retains a considerably higher moisture content than in conventional processing. The parchment is removed while the beans are still moist, followed by a final drying stage.

This distinctive method contributes to the coffee’s signature full, creamy body, low acidity and deep aromatic character.

In the cup, dark chocolate and bitter cocoa meet layers of tobacco, black pepper and nutmeg, while a rich sweetness reminiscent of molasses and caramel leads into a long finish of exotic spices.

An intense and authentic Indonesian coffee that reflects the volcanic landscape, forests and coffee-growing communities of Bajawa.
