Señor José Navarro has been a production manager since the late last century (the 1980s). In 2002, he handed over the reins and legacy to his son Ismael, who is now the principal manager of the family-owned farm.
Only fully ripe cherries (with a Brix degree measured around 26) are selected. Anaerobic fermentation in airtight tanks lasts from 18 to 23 hours. The fermentation process is stopped when the sugars in the mucilage have been completely consumed. Then, there is a pre-drying phase on a concrete patio for 3 or 4 days, aimed solely at reaching the ideal moisture content.
