This exclusive micro-lot comes from Granja Paraiso 92, the farm of Wilton Benitez, widely recognized as one of the most innovative specialty coffee producers in the world.

The Chiroso varietal is highly sought after by coffee professionals for its remarkable ability to produce complex floral and fruit-driven cup profiles. Grown at 1,950 meters above sea level, it benefits from ideal climatic conditions that allow slow cherry maturation and exceptional sugar development.

After hand harvesting, cherries are sorted by size and density before undergoing a strict sanitation protocol using ozonated water and ultraviolet light. The cherries are then immersed in water at 90°C to enhance their natural sweetness.

Fermentation takes place for 62 hours in anaerobic bioreactors at controlled temperature with the addition of selected SafLager S-23 yeast. The coffee is then dried for 88 hours at 40°C, resulting in remarkable cup clarity and precision.

The cup reveals vibrant notes of nectarine, apricot, strawberry and hibiscus, layered with lychee liqueur, coriander, white pepper and cold cardamom nuances. The body is silky and oily, the structure complex and balanced, while the finish is long, fresh and elegantly minty.
