Origin and provenance
Freddy Correa is the mind behind the magical coffee from the La Primavera plantation in Bajo Encanto. Since 2018, he has been experimenting with spectacular processes that are bearing fruit. Since then, he has built a reputation for producing some of the most vibrant Pink Bourbon coffees. The creation of this particular lot involved a double fermentation method, starting with a 24-hour pre-fermentation phase inside the cherry, followed by an additional 36 hours of aerobic fermentation in mucilage-filled bags. To complete the process, the coffee beans were dried on raised beds, exposed to the sun for about 15 days.
