Origin and provenance
Wilder Lazo ventured into the world of coffee in 2017, when he lent a hand to his father at the picturesque Tocora farm, nestled among the San Adolfo mountains. The anaerobic natural processing method used for this coffee is quite particular, as it uses GreenPro plastic bags to ferment the beans without any exposure to oxygen. Wilder ferments the SL28 variety in these bags for 200 hours. After fermentation, the coffee is dried for 15–20 days, followed by a further 35 days of resting to ensure stability and consistency. Wilder’s passion for learning and his interest in coffee genetics led to this exceptional lot of SL28.
