Origin and provenance

This unique microlot originates in the Quindío region, in the heart of Colombia, from the passion and experience of Jairo Arcila, one of the most innovative producers in the specialty scene. The chosen variety is Castillo, selected for its resistance to coffee rust and for its excellent adaptability, but here interpreted in a totally new way thanks to experimental fermentation and aging in rum barrels.

The process begins with a 24-hour dry anaerobic fermentation, followed by initial drying on raised beds until reaching 18% humidity. Subsequently, the coffee is stored for 50 hours in GrainPro bags, before being dried again to the optimal level of 10.5%. The most characteristic phase comes at the end: the coffee is left to age for 20 days in rum barrels, which enrich the raw material with deep and liqueur-like aromas.
