origin and provenance
Ethiopia is considered the birthplace of coffee, where Coffea Arabica has grown wild for centuries. Here, coffee is more than just an agricultural crop: it is an integral part of the culture, spirituality, and daily life of the people.
In the Sidamo region, in the south of the country, the plants grow at high altitudes—around 1,600 meters—in a unique microclimate characterized by regular rainfall, rich volcanic soil, and high biodiversity. Small-scale local producers, often grouped together in cooperatives, pick the cherries by hand, selecting only the perfectly ripe ones. The washing process, followed by careful drying on raised African beds, allows for an extremely clean, luminous, and complex cup.
The ancient and not yet fully classified Ethiopian heirloom varieties are the foundation of Sidamo’s extraordinary aromatic profile: in the cup, distinct floral notes, hints of black tea, rose petals, and citrus fruits are found, along with an elegant sweetness and bright acidity.
