The Chevas Coffee Estate is a family-run business located in El Salto and Alto Quiel, Boquete, between 1,500 and 1,750 meters above sea level. It was founded in 2016, but the family has been working on their land for almost 40 years. Today, they process their coffee together with Adrian Villarreal, 2020 National Barista Champion, believing that partnering with a barista, who gives the final touch to the cup, could lead them to discover and create variations in their coffee, using different processes that can increase quality and enhance the sensory experience. In the “Balloon process,” the depulped beans are fermented in a sealed bag with their mucilage to obtain greater sweetness, along with a special yeast to increase the amount of carbon dioxide. In 2 hours, the bag transforms into a balloon.
