L0 Specialty Ethiopia Beloya Bus. Beans 250 g

The cherries are highly selected, choosing only the ripest ones. They are then vacuum-packed in special sealed bags where anaerobic fermentation takes place for 120 hours. The anaerobic process begins around the first 18-24 hours, causing CO2 formation in the bags. The fermented cherries are then sun-dried on African Beds for 15-18 days, and continuously moved to prevent over-fermentation or mold formation. Once the cherries are sufficiently dried, they are left to rest before being transported to the central dry mill in Addis Ababa for secondary processing (hulling, sorting, and manual selection).
