Origin and provenance
A complex and vibrant coffee produced from the Villa Sarchi varietal grown in Tarrazú, Costa Rica, at Juanachute farm.
Freshly harvested cherries undergo a meticulous natural anaerobic process: first sealed in barrels for 120 hours of anaerobic fermentation, followed by an additional 120 hours of open-air fermentation. The coffee is then dried on sun-exposed raised beds for approximately 40 days and finished with a final drying phase to ensure consistency.
Every step is overseen by Don Tacho Castro, who manages the entire process from cultivation to packaging, ensuring exceptional quality standards.
In the cup, it delivers a layered and expressive profile of brown sugar, red fruits and dark chocolate, with refined hints of red wine and vanilla — a true reflection of Tarrazú’s high-altitude terroir and Juanachute’s innovative approach.
