An experimental coffee produced by Jairo Arcila at Santa Mónica farm in Armenia, Quindío.

This 100% Pink Bourbon micro-lot is the result of an innovative fermentation approach: cherries undergo 72 hours of dry anaerobic fermentation with the pulp intact. During this stage, dehydrated lychee is added, shaping the coffee’s unique aromatic profile.

After fermentation, the coffee is pulped and dried on raised beds under controlled temperatures below 35°C until optimal moisture content is achieved.

Pink Bourbon, still under research, is known for its exceptional cup potential and ability to produce highly expressive and complex flavor profiles.

In the cup, it reveals an intensely vibrant profile: lychee takes the lead, intertwined with floral lavender notes and sweet cinnamon bun nuances, supported by a dark chocolate base.

A coffee that represents the most creative and contemporary edge of Colombian specialty coffee.
