Origin and provenance
Jairo Arcila is a third-generation coffee grower from Quindío, Colombia. This coffee underwent a 72-hour dry anaerobic fermentation, with the pulp remaining on the cherries. During this fermentation phase, passion fruit pulp and wine yeast were added. Subsequently, the cherries were depulped and dried on raised beds, with passion fruit pulp interspersed between the coffee until optimal moisture content was reached. This microlot is composed entirely of the Castillo variety, developed by the Federación Nacional de Cafeteros. It is known for its higher productivity compared to Caturra and its resistance to coffee rust.
