Origin and provenance
Grown by Luz Helena Salazar at Finca Maracay in Armenia, Quindío, this Castillo microlot underwent a 72-hour dry anaerobic fermentation with the pulp on. During fermentation, blueberries and wine yeast were added to amplify sweetness and fruit character.
After pulping, the cherries were dried on raised beds until reaching optimal moisture. The result is a complex, elegant and fruit-forward cup that highlights Colombia’s pioneering approach to coffee fermentation.
