This micro-lot comes from Finca La Macarena, the farm of Wilton Benitez, one of the most innovative and respected producers in Colombia’s modern specialty coffee scene.

The Yellow Bourbon variety is cultivated at 1,950 meters above sea level and undergoes an advanced processing protocol combining manual cherry selection, density sorting, ozonated water and UV sterilization, anaerobic bioreactor fermentation and thermoshock technology.

After harvest, cherries are immersed in 90°C water for a few seconds before being pulped. Fermentation then takes place in an anaerobic bioreactor with selected Saccharomyces pastorianus yeast, while pH and Brix levels are continuously monitored and adjusted to ensure optimal microbial activity. Following 96 hours of fermentation, the coffee is slowly dried under controlled temperatures.

The result is a remarkably precise and expressive cup: floral notes of hibiscus and magnolia are layered with red grape, vanilla and milk chocolate. The body is syrupy and silky, the acidity bright yet delicate, while sweetness and cup cleanliness reach exceptional levels.
