Colombia Granja Paraiso Tabi is produced at Granja Paraiso 92, the innovative farm owned by Wilton Benitez, internationally recognised for combining coffee production with microbiology, fermentation science and precision processing.
Only perfectly ripe cherries are hand-picked before being sorted by size and density. They are then sanitised with ozonated water and ultraviolet light, briefly immersed in 90 °C water to enhance natural sweetness, and fermented for 62 hours in sealed bioreactors at 20 °C using SafLager S-23 yeast. The coffee is finally dried slowly for 88 hours under carefully controlled conditions.
The Tabi variety, developed in Colombia for both cup quality and disease resistance, reaches remarkable complexity through this processing method. Scoring 89 SCA points, this coffee delivers a vibrant, juicy and structured cup with exceptional clarity, bright acidity and layers of dried dates, golden raisin, blackcurrant, blueberry, red grape, cranberry, nectarine and tamarind.
