Chorora is owned by Olinka Velez and is located next to its twin farm Yambamine, on a steep hill in Sozoranga, Loja, Ecuador. Surrounded by the cloud forest and crossed by the ancient Inca Trail, the farm is a place of beauty and energy.
The “Passion Flowers” process<\/strong> was born as an experiment at the Finca Yambamine, the \u201csister farm\u201d of Chorora, when Ren\u00e9, along with some roasters from the UK, decided to try something new. The results were very promising, so much so that Ren\u00e9 decided to replicate the same method at Chorora. <\/p>

  1. The coffee cherries are pulped, leaving some mucilage attached to the bean.<\/li>
  2. The parchment coffee is then placed in tanks along with the cherry skins (cascara).<\/li>
  3. A culture of selected lactic bacteria is added inside the tank, after which the container is sealed and injected with CO\u2082.<\/li>
  4. The fermentation lasts 72 hours. Once completed, the coffee is washed and spread on African beds for controlled drying. <\/li><\/ol>

    This method enhances the floral complexity and delicate acidity of Sidra. Olinka and her family are pioneers of Ecuadorian specialty coffee, driven by transformation, curiosity, and a deep respect for their land. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t
