They are then vacuum-packed in special sealed bags where anaerobic fermentation takes place for 120 hours. The anaerobic process begins around the first 18-24 hours, causing CO2 formation in the bags. The fermented cherries are then sun-dried on African Beds for 15-18 days, and continuously moved to prevent over-fermentation or mold formation.
