Ecuador Chorora

A coffee that tells the wild beauty of Ecuador. This Sidra, cultivated at the Chorora farm owned by Olinka Velez, is the result of a unique terroir: a slope immersed in the cloud forest of Sozoranga, crossed by the ancient Inca Trail.

The sensory profile is complex and vibrant: red fruits, peach, plum, and lime intertwine with a fine citric acidity and light floral notes. A true expression of elegance and intensity.

Origin and provenance

Chorora is owned by Olinka Velez and is located next to its twin farm Yambamine, on a steep hill in Sozoranga, Loja, Ecuador. Surrounded by the cloud forest and crossed by the ancient Inca Trail, the farm is a place of beauty and energy.
The “Passion Flowers” process was born as an experiment at the Finca Yambamine, the “sister farm” of Chorora, when René, along with some roasters from the UK, decided to try something new. The results were very promising, so much so that René decided to replicate the same method at Chorora.

  1. The coffee cherries are pulped, leaving some mucilage attached to the bean.
  2. The parchment coffee is then placed in tanks along with the cherry skins (cascara).
  3. A culture of selected lactic bacteria is added inside the tank, after which the container is sealed and injected with CO₂.
  4. The fermentation lasts 72 hours. Once completed, the coffee is washed and spread on African beds for controlled drying.

This method enhances the floral complexity and delicate acidity of Sidra. Olinka and her family are pioneers of Ecuadorian specialty coffee, driven by transformation, curiosity, and a deep respect for their land.
