There are few plants in the world with such a broad variety of fruits as Coffea.

More than 60 species with thousands of different beans grow in 50 coffee-growing countries spread around the planet’s tropical belt where there is a consistently temperate climate.

Rain kicks off the flowering period, which lasts for two weeks, after which the fruit takes almost nine months to ripen.
This similarity with the time of a human pregnancy is particularly fascinating because the fruit of a specific plant is the true offspring of its land of origin. It will have unique characteristics which derive from its vicinity to other crops or to the sea, from the altitude at which it grew, from the wind that caressed the plant and from the care it was given while it developed.

But we’re only at the start of our journey.
Once the beans are ripe they undergo numerous processes, each of which may influence the bean’s future ability fully to express its innate qualities as part of a blend.

It goes without saying that the more stringent the process, the more careful the selection, the higher the cost of that particular harvest in order properly to repay a job which, luckily, many growers still do with care and passion in countries across the globe.

Only a demand for the best beans available on the market will contribute to solving the problem of a proper allocation of value throughout the production chain. .

Only by using the best beans – not just generic Arabica or Robusta but according to their country of origin – classified according to calibre and lack of defects can we “compose” a blend that will be recognised and appreciated.

For 7Gr., the selection and purchase of raw coffees is the moment in which, ideally, the person who took such great care of the fruit “hands over” to those who take on the task of enabling it to express its characteristics and aromatic profile to best effect.

For those, like us, who specialise in espresso blends, the countries of origin are a foregone conclusion:

• Brazil : The basis of our blends. Santos coffee, famous for its high quality beans, gives the blend the roundness necessary to harmonise with the other beans’ sensory characteristics. Its sweet, aromatic notes with subtle hints of almond accompany an appropriate body together with its most distinctive characteristic: a definite cocoa aftertaste.
  
  
• Ethiopia : This country supplies the finest washed Arabica beans. Their supremely elegant flavour has medium acidity together with sweet and citrus fruit notes. Sidamo coffee is grown in the central-west area of the country. Its small yet exceptional beans constitute a unique component of the blend, creating an acid/sweet fusion with a delicate hint of rose.
  
  
• Colombia : Supremo, the highest grade of Colombian coffee, is one of the finest components of our blends. Its perfect balance and delicate flavour leaves an unmistakable aroma of chocolate enriched with fruity notes.
  
  
• Central America : This geographic zone produced very aromatic Arabica coffees with an elegant, well-balanced flavour and a sweet, chocolate aftertaste. Their distinguishing trait is their balance and medium body.
  
  
• India : One of the finest washed Robustas, Parchment, is grown and processed in India. Parchment is an important element of our grand cru; it enables us to give our espresso its rich, velvety body and distinctive spicy notes, which would be hard to reproduce using the same variety from any other country.
